Power Muffins

Now that the holidays have calmed down we are able to get back into our routine. Which includes going to the gym and finally eating healthy again. After work you need a pick me up to have the energy to work out. It's also nice to have something quick in the morning when you don't have time for breakfast. What meets these needs? Muffins of course.

When you have bananas at home that look like this what else do you do besides bake with them?

I found this recipe on Pinterest and love quick and easy recipes. I have made a few changes to the recipe based on what I happened to have in the pantry and fridge. So here is what I did to make my eggless, flourless, banana, oat, chia seed, and cinnamon muffins!

Power Muffins

Ingredients:

-2 cups oats

-2 very ripe bananas

-1 cup plain greek yogurt

-3 Tbsp honey

-1 1/2 tsp baking powder

-1/2 tsp baking soda

-1/2 tsp pure vanilla extract

-1/8 tsp salt

-1 Tbsp chia seeds

-1 tsp cinnamon

-1/2 cup whole milk

Directions:

Step 1: Preheat oven to 400 degrees F.

Step 2: Add everything to your blender.

Step 3: Blend until everything is well combined and the oats are chopped completely.

Step 4: Pour your batter into your muffin tin 3/4 of the way full. If you do not have these handy dandy silicone baking cups, I recommend either using paper cups or butter and flour your tin. I highly recommend getting these awesome silicone cups because they're so much easier to use--especially with muffins.

Step 5: Bake muffins for 15 minutes or until a toothpick comes clean.

Step 6: Let cool in the muffin tin, remove, and enjoy.
